- 1 tspCornflour

Method
- Mix the flour, baking powder, sugar and salt.
- Whisk the egg, milk and butter separately, then fold them into the dry ingredients without overmixing.
- Heat a non-stick pan over a medium-low heat and cook each pancake for 1 to 2 minutes a side, until golden and cooked through.
- For the sauce, dissolve the cornflour in the cold water and bring it to a gentle heat until it thickens slightly.
- Take the sauce off the heat, let it cool a little and stir in the Tim Tam Tum and lemon.
- Serve three pancakes per person with a spoonful or two of sauce and fresh fruit.
More
- Why it works
- The ripe fruit, vanilla and spice of the liqueur give depth to a gentle batter.
- Tip
- The liqueur goes in off the heat: it keeps its aroma that way, and its alcohol too.
- To serve
- A stack of pancakes with the glossy sauce on top and fresh fruit.
This recipe contains alcohol. Cooking does not remove it completely, so a dish made with liqueur should never be presented as alcohol-free.
