Madeira Sour
Citrus, spice and silk
Tim Tam Tum with fresh lemon and a touch of bourbon: a bright, elegant way to discover its notes of fruit and spice.
Ingredients
- 50 mlTim Tam Tum
- 25 mlLemon juice, freshly squeezed
- 15 mlBourbon
- 15 mlPasteurised egg white (optional)
- Ice
- 1Strip of orange peel, to garnish
Method
- Chill a coupe. Add the Tim Tam Tum, lemon juice, bourbon and, if using, the egg white to a shaker.
- If using egg white, dry-shake for 10 seconds without ice to build the foam.
- Fill with ice and shake for another 12 to 15 seconds.
- Double-strain into the chilled coupe. Express the orange peel over the top and use it to garnish.
More
- Why it works
- Lemon balances the sweetness of the liqueur, and bourbon adds body without masking the fruit and spice.
- Tip
- Start with 25 ml of lemon and adjust to taste. Without egg white, skip the dry shake.
- To serve
- A well-chilled coupe, with an even foam if you use egg white.
An alcoholic drink, for adults only. Enjoy it slowly and in moderation.
