Spiced Tim Tam Tum caramel

A base sauce for your desserts

A caramel sauce with Tim Tam Tum to serve with ice cream, pears or pancakes, with a spiced edge.

Ingredients

Makes8 servings8 servings
  • 120 gCaster sugar
  • 40 mlWater
  • 120 mlDouble cream, warm
  • 25 gButter
  • 45 mlTim Tam Tum
  • 1 pinchSalt
  • 1 pinchGround cinnamon (optional)

Method

  1. Put the sugar and water in a small heavy-based pan and heat over a medium heat, without stirring, to an amber caramel.
  2. Take off the heat and add the warm cream a little at a time: it will bubble up fiercely.
  3. Stir carefully until smooth, then add the butter and salt.
  4. Leave to cool for 5 minutes, then stir in the Tim Tam Tum and, if you like, the cinnamon.
  5. Keep in a clean jar in the fridge and serve in small amounts.

More

Why it works
Caramel reinforces the warmth of the liqueur, while salt and cream temper the sweetness.
Tip
Take care: hot caramel burns badly. Add the cream gradually. The liqueur goes in last and keeps its alcohol.
To serve
In a small jug, fluid and glossy.
Meet the liqueur

This recipe contains alcohol. Cooking does not remove it completely, so a dish made with liqueur should never be presented as alcohol-free.
