Spiced pears with Tim Tam Tum
An elegant fruit dessert
Pears poached slowly with cinnamon and orange, finished with an aromatic Tim Tam Tum syrup.
Ingredients
- 4Firm, ripe pears
- 350 mlWater
- 80 gCaster sugar
- 1Cinnamon stick
- 2Strips of orange peel
- 80 mlTim Tam Tum
- 1 tspLemon juice
Method
- Peel the pears, keeping the stalks, and trim the bases slightly so they stand upright.
- Bring the water, sugar, cinnamon and orange peel to a medium heat until the sugar dissolves.
- Add the pears and poach gently for 20 to 30 minutes, turning them, until a thin knife slides through.
- Lift out the pears and reduce the liquid for 5 to 8 minutes over a medium heat, to a light syrup.
- Take off the heat and stir in the Tim Tam Tum and lemon.
- Serve the pears warm or cold with a little of the syrup.
More
- Why it works
- Pear sits naturally with the winey, spiced side of the liqueur.
- Tip
- Poaching time depends on how firm the pears are. Added at the end, the liqueur keeps its alcohol.
- To serve
- One whole pear per plate, with a discreet glaze.
This recipe contains alcohol. Cooking does not remove it completely, so a dish made with liqueur should never be presented as alcohol-free.
