Vanilla panna cotta with Tim Tam Tum
Silky texture and an aromatic sauce
Vanilla panna cotta with a thin layer of Tim Tam Tum sauce: a delicate, aromatic dessert.
Ingredients
- 400 mlDouble cream
- 150 mlMilk
- 55 gCaster sugar
- 1 tspVanilla extract
- 7 gUnflavoured powdered gelatine, or as the maker advises
- 35 mlWater, cold
Sauce
- 75 mlTim Tam Tum
- 75 mlWater
- 1 tspCornflour
- Finely grated orange zest (optional)
Method
- Bloom the gelatine in the cold water, following the maker’s instructions.
- Warm the cream, milk, sugar and vanilla over a medium heat without letting it boil.
- Take off the heat, add the bloomed gelatine and stir until dissolved.
- Divide between the small glasses and chill for at least 4 hours, until set.
- For the sauce, dissolve the cornflour in its water and heat, stirring, until it thickens slightly. Take off the heat and let it cool a little.
- Stir the Tim Tam Tum into the sauce and pour a thin layer over each glass just before serving.
More
- Why it works
- Cream and vanilla make a neutral base that lets the spices of the liqueur come through.
- Tip
- Check the amount of gelatine for your brand. The sauce goes on at the end and contains alcohol.
- To serve
- A clear small glass with its amber layer of sauce.
This recipe contains alcohol. Cooking does not remove it completely, so a dish made with liqueur should never be presented as alcohol-free.
